If you delete a user and they had meetings that were unresolved, the meeting is then orphaned. There is no way to reassign the meeting a new owner and it will be removed from the database at the next export-import of the data.

We first rename the user with a bunch of zzz's in the front of their first and last name to put them at the bottom of the list. Then the departments manager reviews the persons calendar for any meetings that may need to be reassigned.

To archive the data without deleting the user, since we have a hubbed environment we created an extra "dead" server with no licenses and use the hub to move old users to this dead server. If we ever need to reference that persons data again, we can easily make him live by doing a user move back to a database with active licenses (only do user moves off hours btw).

Finally, the easiest thing to do when someone leaves the company is to just assign the new person taking over that position the old persons calendar and leave it to them to cancel or reassign the meetings.

Although we have a much smaller meetingmaker base of 500 users on
one server, running 7.3.0, we have not deleted any data whilst
importing or exporting for at least 5 years. (due to management
policy). We do however delete users when they leave. The size of
the database is 100mb.
On a related note, What if any is the impact on another user's calendar
if the deleted employee scheduled a meeting with this user?
